Español: El pambazo de Tequixquiac generalmente está relleno de chorizo con papa, pero hay otros rellenos como el de carne de guajolote o el de barbacoa de cordero; todos llevan lechuca, "salsa de chile chipotle," queso blanco y crema. El origen de este alimento es criptojudío, llegó a la Nueva España con los primeros españoles y portugueses que arribaron con Hernán Cortés; actualmente solo se elebora de forma tradicional sefardita en Santiago Tequixquiac y Santiago Tezontlale.
